Rickmansworth · The Minori family

Our story

A family-run restaurant and pizzeria on Church Street, inspired by the Amalfi Coast. The sister of Minori in Hatch End: same family, same 48-hour dough.

The Minori family

Same family, new home.

Minori Rickmansworth is the sister of Minori in Hatch End, founded in 2019 by Mr Fellini, a restaurateur with fifty years of experience and a lifelong researcher of healthy, traditional Italian food.

On Church Street the focus is the kitchen and the cellar: fresh pasta, veal, lamb and fish, Neapolitan pizza on our 48-hour dough, and a wine list from Gavi to Amarone.

The kitchen

Fresh pasta, veal, lamb and fish, and a set menu at lunch and dinner.

A Margherita fresh from the oven

The pizzeria

True Neapolitan pizza on a sourdough base, proved for 48 hours and baked to order.

Bottles of Italian white wine

The wine list

From Gavi to Barolo, Brunello and Amarone, by the glass or the bottle.

How we make our pizza · a UNESCO-listed craft

Every base starts two days before you sit down.

Flour, water, salt and our sourdough starter, left to rise slowly, shaped by hand and baked to order. Scroll to follow the dough.

Mixing

Flour, water, salt and our sourdough starter, mixed slowly.

24h

First rise

A long, cool rest. Flavour builds and the dough gets lighter.

24h

Shaping

The pizzaiolo cuts and rounds each ball by hand.

48h

Second rise

The balls rest again until they are soft and airy.

48h

Into the oven

Stretched by hand, never rolled, and baked to order.
